Key Lime Pie Rice Krispie Treats

I wish making pie really was “easy as pie,” but most of the time, it’s a pain. Then even when you make pie, it’s a pain to eat because it’s frowned upon to eat it with your hands. Who has the time or patience for silverware? Not this girl. And I certainly don’t have it in me to wait for a pie to bake and cool. Oh no, definitely not.

Why would I bother with real pie when I can get all its flavor in a Rice Krispie treat? It might sound ludicrous but my Key Lime Pie Rice Krispie Treats taste just like the real thing – except I didn’t have to bake a crust or make a filling. All that tangy-sweet flavor is infused right into the treats.

RKTs are commonly known as the easiest treat ever. Even the most culinary inept folks can make RKTs without issue. Pie, however, is not so forgiving. So forgo the sweat and tears for a treat that’s made  with love instead.

How do I make my crispy, gooey RKTs taste just like key lime pie? It’s simple – I stir key lime pie filling mix right into the RKTs while making them. The bars are bursting with bright flavor and dusted with graham cracker crumbs. A drizzle of white chocolate mellows out the tangy lime flavor, sealing these refreshing bars together.

RKTs can be put together in 20 minutes or less. Then you just have to wait for them to set, which is the worst part. I say save yourself some molten RKTs to munch on while the rest is setting. That’s what years of experience have taught me.

Turn the oven off and put away the pie dish. I’ve got a sweeter, fruitier, chewier treat that makes for the ultimate dessert: it’s finger food, it’s easy, and it’s a fun twist on a favorite.

Perhaps I should just convert my pie dish into a water dish for my cats now.

A Few Tips Before You Get Coooking:

  1. I use extra marshmallows to make my RKTs chewier.
  2. Green food dye is optional. It merely adds to the effect.
  3. Make sure you stir the marshmallows constantly while they’re melting so they don’t burn.
  4. Find key lime pie mix near the pudding mix.

Key Lime Pie Rice Krispie Treats
By The Smart Cookie Cook

  • 6 cups Rice Krispie cereal
  • 4 tbsp. butter
  • 10-oz. large marshmallows + ½ cup mini marshmallows
  • ½ cup dry key lime pie mix
  • Green food dye, optional
  • ¾ cup graham cracker crumbs
  • 1 ½ cups white chocolate chips

Directions:

  1. Spray a 9×13 dish with nonstick cooking spray. Set aside.
  2. In a large pot, melt the butter. Stir in the marshmallows and continue to stir until completely smooth and melted. Remove from heat and immediately mix in key lime pie mix and food dye (if using) until evenly combined. Add more or less dye depending on what color you want.
  3. Immediately fold in the Rice Krispies until evenly coated. Pour into prepared dish and press down into an even layer. Sprinkle graham crackers evenly over top and press down again gently. Let cool and set completely.
  4. Place white chocolate in a medium microwave-safe bowl and microwave on high for 25-second intervals, stirring well in between, until completely smooth and melted. Drizzle over the top of the treats and cut into even squares. Store in an air-tight container.
