Lemon Strawberry Donut Trifle

This Lemon Strawberry Donut Trifle is the result of my impulsive buying.

I’ve set a new rule for myself that I only do one grocery trip a week, and the only exception is if I desperately need something. I had to make an exception this week when I ran out of cat food and coffee; certainly, I couldn’t allow my fur babies to starve, and we all know I can’t survive the rest of the week without coffee. So I tell myself, I’m just going in for coffee and cat food, and that’s final.

Naturally, I got completely side-tracked in the grocery store, despite my best efforts to make a B-line for the coffee. A display of donuts caught my eye, and TastyKake had new Strawberry Mini Donuts. Strawberry cake and donuts are absolutely irresistible to me, and these were 2 bags for $4, so I made myself this deal: Think of something amazing to bake with them, and you can buy them.

It took about 2 seconds for me to dream up a delightful layered trifle dessert with these donuts. So I snagged the donut bags, almost forgetting the coffee and cat food I came to the store for, and hurried home. The next day, my Lemon Strawberry Donut Trifle was born.

I stacked up this trifle almost as quickly as I dreamed it up. The whole masterpiece is no-bake, and the filling can be made in mere minutes. Then we simply pile it all into a trifle dish. Now, you have a choice: you can eat it right then and there, or you can let it chill in the fridge so all of the flavors come together. It’s tough waiting, but worth it, if you ask me.

I think this well-justifies my grocery store detour. See, detours aren’t always a bad thing.

A Few Tips Before You Get Cooking:

  1. To whip up this filling successfully, make sure the cream is well-chilled.
  2. The more you let this dessert chill, the better it will be.
  3. Add fresh raspberries for a little tartness.
  4. You can put this in a pretty trifle dish or individual parfait glasses.

Lemon Strawberry Donut Trifle
By The Smart Cookie Cook

Ingredients:

  • 2 1/2 cups heavy cream, chilled
  • 2 tbsp. cornstarch
  • 2 tsp. vanilla extract
  • 10 oz. lemon curd
  • 10 oz. bag TastyKake Strawberry Donuts, halved width-wise

Directions:

  1. In a large mixing bowl with a hand mixer, beat together all ingredients except for the donuts on high speed until thick and fluffy with stiff peaks.
  2. Put a very thin layer of filling on the bottom of your trifle dish or bowl. Cover the bottom in a single layer of donuts. Top the donut layer with half the filling.Cover with another layer of donuts. Finish with the rest of the filling. Line the bowl with a ring of donuts. To repeat it’s: base layer of filling, donuts, filling, donuts, filling.
  3. Cover and chill before eating, at least 6 hours or overnight.
