Ice Cream Pebbles Rainbow Sherbet Treats

The kid in me can’t stop buying sugary cereals. You don’t realize how good you have it as a child when you can eat bowls of cereal bigger than your face for breakfast and not gain a single pound. It was acceptable, encouraged even. Nowadays, all I can do walk by wistfully, yearning for the sugary crunchiness of my past.

I could do that, or I could just buy it anyway. Although I won’t make a meal out of cereal, I can bake with it. You know that classic Rice Krispie Treat recipe everyone makes and loves because it’s so easy but so good? You can use that same premise with any cereal.

So when I grabbed the new Ice Cream Pebbles Rainbow Sherbet for the last edition of Smart Cookie Shopping, I knew I had to make them into Ice Cream Pebbles Rainbow Sherbet Treats. This colorful no-bake delight is a whimsical twist on a favorite cereal treat, and everyone will feel their inner-kid light up at the sight of them.

My boyfriend actually just walked up to them on the counter and went, “Ohh pretty.”

The fruity, tangy taste won’t let you down either. Those Ice Cream Pebbles really do taste like rainbow sherbet. It’s candy-like, ooey gooey goodness, with flavors of summertime and rainbow skies.

A Few Tips Before You Get Cooking: 

  1. Make sure you continuously stir the marshmallows while melting so that they don’t burn.
  2. Top these with any pretty sprinkles you want.
  3. You can make this same recipe with the classic Fruity Pebbles, or with Cocoa Pebbles.
  4. Work fast when you’re stirring the cereal into the melted marshmallow so you can get it all incorporated before it starts to solidify.

Ice Cream Pebbles Rainbow Sherbet Treats
By The Smart Cookie Cook

Ingredients:

  • 3 tbsp. butter
  • 6 cups Ice Cream Pebbles Rainbow Sherbet
  • 12 oz. large marshmallows
  • rainbow sprinkles

Directions:

  1. Spray a 9×13 pan with nonstick spray. Set aside
  2. In a large mixing bowl over medium heat, melt the butter.
  3. Stir in the marshmallows and continue stirring until completely melted, about 5 minutes. Immediately fold in the cereal until evenly combined.
  4. Transfer to prepared pan. Spray your hands lightly with nonstick spray and press the treats down into an even layer (this keeps it from sticking to your hands). Let cool and set completely, about 1 hour, then cut into squares.
