Coconut White Chocolate Red Velvet Pizza

When pizza is your favorite food, it only makes sense to find a way to eat it for dessert. I get the best of both worlds with my Coconut White Chocolate Red Velvet Pizza. I’ll admit I can’t inhale as many slices of this rich dessert as I can regular pizza, but that’s because there are so many sweet toppings. A little bit goes a long way.

This may be the only time when a red pizza crust looks so appetizing. Although it starts with a boxed cake mix, the crust bakes up to be fluffy, tender, and moist with that deep chocolaty flavor we love so much in red velvet. I melt white chocolate directly onto the crust, then bury it in toasted coconut to look freakishly like cheese. Oreo “pepperoni” adds to the illusion.

It’s a little weird, and a lot of awesome.

We sliced and served it just like pizza, but I’ll say this crust melts right in your mouth, unlike the cardboard-esque texture of real pizza. I loved how it contrasted the crisp of the coconut and the crunch of the cookies. Plus, the M&Ms provide a little snap. For my supreme pizza lovers, this a dessert after your heart.

A Few Tips Before You Get Cooking:

  1. To melt the chocolate right on top of the pizza, make sure you sprinkle it on top as soon as you take the pizza out of the oven.
  2. I am the queen of burning coconut, but if you cook it for very short intervals and stir in between, you won’t have a problem.
  3. Feel free to switch up the toppings to suit your preference.
  4. You can make the dough and chill it a few hours before making the pizza, but make sure you let it sit at room temperature for 30 minutes before baking.
  5. Use the Red Velvet Oreos if you really want them to look like pepperoni.

Coconut White Chocolate Red Velvet Pizza

Ingredients:

  • 1 cup shredded coconut
  • 1 box red velvet cake mix
  • 1 stick (8 tbsp) unsalted butter, softened
  • 2 eggs
  • 2 tsp. vanilla extract
  • 4 oz. white chocolate, chopped into small pieces
  • 4 Oreos (I used the Filled Cupcake Oreos), separated into halves
  • 1/3 cup Strawberry Shortcake M&Ms (or any flavor M&Ms)

Directions:

  1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
  2. Lay coconut in an even layer on the pan. Bake for 3 minutes then stir and bake for another minute or until golden. Set aside. Keep oven on 350.
  3. Line a pizza pan with parchment paper.
  4. In the bowl of a standing mixer, beat together cake mix, butter, eggs, and vanilla until well-combined.
  5. Transfer dough to pan. Spray one of your hands lightly with nonstick cooking spray and rub your hands together (this will keep the dough from sticking to your hands). Pat the dough down, gently working out to the edges of the pan in an even layer. Bake for 10 minutes or until puffed and set.
  6. Immediately sprinkle the chopped chocolate over the warm pizza. Let it sit for 1 minutes then use a butter knife to gently spread the chocolate out into a smooth, even coating.

  7. Sprinkle the toasted coconut over top evenly. Place the half-Oreos on the pizza, spreading them out. Then finish with the M&Ms.

  8. Let cool completely then slice and enjoy. Store in an air-tight container.
